Appearance: The color is pale gold with bright and shiny gold reflections. The flow of bubbles is regular, dense and dynamic. The bubbles are fine and form a fine cord suggesting a certain delicacy.
Olfactory aspect: The first smell has a very pleasant slight fleeting reduction, which then reveals ripe fruits, candied fruits, pastry notes offering a certain sweetness. Allowed to breathe, we find fresh fruit, apricot, peach and a hint of citrus. We feel chlorophyll notes reinforcing the freshness of the wine. Finally, the richness is brought by aromas of stones, enhanced by very pretty white flowers.
Taste aspect: The mouthfeel is lively and offers an intense and delicate touch of bubbles. The texture of the wine is soft, silky and fleshy. We quickly enjoy its full indulgence with aromas of ripe fruit, peach, pear, stone fruit, fruit in syrup. The heart of the palate reflects the pleasure of fruit in all its splendor. Then, the wine gains finesse and complexity thanks to its slender structure which takes us towards a long, vinous finish, paradoxically fresh and reinforced by the tension of lemon and grapefruit.
Blend: Pinot noir: 30% Meunier: 50% Chardonnay: 20%
Simple pleasure: aperitif, brioche with dried/candied fruits, coppa and parmesan, beaufort
Moment of relaxation: veal and its reduced juice, pasta with cockles, lightly lemony cod

The Champagnes by Family Daouliaris / Berat are like a photograph and they tell a story, the story of 4 generations of vignerons. It is a story about their values, their respect for their vineyards, preserving them to obtain the best grapes and their passion for producing Champagne.
At the beginning, the Berat family was a family of winegrowers specializing in Champagne and since the 19th century, they have been selling their grapes.
The 4th generation Daouliaris/Berat family, took the decision to buy their grapes from the same area of Boursault, in order to create their own “Ernest Berat” Champagne with the same Brut varieties (Pinot Noir, Meunier, Chardonnay). With respect to the environment and the new forms of technology along with their history, they have created an excellent product proceeding from the selling of grapes to the production of Champagne.
