Histoire de la Champagne

The tradition in Champagne is very old. It was the Romans, experts in vine cultivation, who identified the hillsides and soils of our region. They planted grape varieties capable of withstanding the rigor of our climate, because in fact Champagne is a region located at the northern limit of vine cultivation, the average annual temperature is 10 ° C, or, below At an average of 8°C, the grapes can no longer ripen and the vines can barely survive.

This is one of the secrets of the freshness and inimitable finesse of our wines, without forgetting the typicality of our soil; a layer of clay-limestone soil which rests on a significant layer of chalk.

For the production of Champagne, only three grape varieties are authorized:

Pinot Noir

Black grape with white flesh It gives the wine aromas of red fruits, it is the grape variety that brings body and power to the blend.

Meunier

Chardonnay

White grape with white flesh. This grape variety brings finesse and freshness, sometimes it brings floral notes in wine

Les Régions

Depending on the type of champagne sought, we can blend these three grape varieties, taking into account their taste characteristics.

Inside Champagne area, the Marne vineyards are divided into three small regions:

  • La Vallée de la Marne

    There are three Champagne grape varieties, but there is a dominance of meunier.

  • La Montagne de Reims

    The three grape varieties are also present, but we can see a dominance of Pinot Noir.

  • La Côte des Blancs

    As its name suggests, it mainly contains chardonnay.

La géographie

The vineyard is located entirely in the commune of BOURSAULT, whose land has had vines since the 16th century and is made up of approximately 250 hectares of vines.

BOURSAULT is located in the heart of Champagne, more precisely in the Marne Valley.

La Famille

The Champagnes by Family Daouliaris / Berat are like a photograph and they tell a story, the story of 4 generations of vignerons. It is a story about their values, their respect for their vineyards, preserving them to obtain the best grapes and their passion for producing Champagne.

At the beginning, the Berat family was a family of winegrowers specializing in Champagne and since the 19th century, they have been selling their grapes.                                                               

The 4th generation Daouliaris/Berat family, took the decision to buy their grapes from the same area of Boursault, in order to create their own “Ernest Berat” Champagne with the same Brut varieties (Pinot Noir, Meunier, Chardonnay). With respect to the environment and the new forms of technology along with their history, they have created an excellent product proceeding from the selling of grapes to the production of Champagne.

Les opérations

The grapes that come from the Boursault regionhas its very specific “character” (exposure, nature of the soil, altitude, etc.), which is why we work the three grape varieties according to their characteristics.

Our grape varieties are distributed as follows:

  • 50% Pinots Meuniers
  • 30% Pinots Noir
  • 20% Chardonnay

Depending on the grape variety, we also work with several pruning systems.
